A quick and easy squeezy recipe idea from Primula cheese

We are big fans of Primula in our house, and today I thought we'd try one of Primula's recipes rather than just squeezing the cheese on crackers.  Don't get me wrong, I think that's a wonderful way to eat Primula, but every once in a while it's nice to experiment.

What can you make with Primula cheese - the Dutch baby recipe

The chefs at Primula Cheese have created a brand new selection of flavoursome snacks which are perfect for summer.  From cheesy parsnip mash to mini breakfast frittatas, but the one that I loved the sound of was "Dutch Baby" with Bacon, Kale and Cheese (not so sure on the kale).

Never heard of Dutch baby before, but oh my days!  Isn't that delicious!!  A Dutch baby is somewhere in between a Yorkshire pudding and a pancake.  Filled with yummy Primula Cheese, delicious bacon and crunchy kale (another new for me, I actually loved the kale in this too).

I made it!  Didn't look as fabulous as the image above but it went down very well with my two men of the house, and will be for sure, adding this to our menu!

"Dutch Baby" with Cheese, Bacon and Kale

What you’ll need:
For the Batter
  • 40g plain flour
  • 120ml full-fat milk
  • 2 large eggs
  • Pinch of salt
  • Pinch of grated nutmeg
  • 4 tbsp. butter

For the Filling
  • 6 slices of bacon
  • 2 handfuls of curly kale, stems removed
  • 1 tsp. olive oil
  • Salt & pepper
  • 100g Primula Original Cheese Tube

Method:
  • Preheat oven to 220˚C/425˚F /Gas Mark7.
  • Place bacon on an oven tray and grill until crispy.
  • Set bacon aside and allow to cool.
  • In a medium bowl, lightly beat the eggs with the milk.
  • Whisk in flour, salt & nutmeg until just combined. The mixture should be a little bit lumpy.
  • Melt butter in a heavy, oven-proof frying pan (a cast iron skillet is ideal), either in the oven or on a hob.

  • When the butter has melted, pour in batter and place in the oven.
  • Bake until pancake is golden brown, approximately 15-20 minutes.

Whilst the pancake is baking:
Fry kale in olive oil over high heat, until edges start to crisp. Season well with salt & pepper.
Break the bacon into shards, and fill the pancake with kale and bacon.
Finish with generous dollops of Primula cheese.
Serve and enjoy!

  1. Sounds delicious. I'll have to give this a try especially as I'm a big fan of kale right now. Unfortunately neither of the boys are though

    1. You know what Clair, I didn't think much of Kale the last time I had it, but cooked this way, was really lovely! We're having it again this week :D I think it helps with iron deficiency so that's a double whammy for me

    2. Yes I agree it does depend how you cook it. I find it is slightly bitter if just steamed so I usually put it in stir fries. Delicious like that. And yes iron is a bonus. I've been taking iron tablets ever since I had to have a blood transfusion last year
